Ingredients

  • 1 cup shredded carrots
  • 1/4 cup chopped onion
  • 1 1/2 teaspoons mild curry powder
  • 1 to 1 1/2 teaspoons salt
  • 1 tablespoon oil
  • 1 1/2 tablespoons water
  • 1 1/2 cups rice

Instructions

  1. Heat the oil in a pan.
  2. Add the chopped onion and sauté until soft.
  3. Add the shredded carrots and sauté together.
  4. Pour in water, lower the heat, cover, and cook for 7 to 10 minutes until the carrots are soft.
  5. Add salt and curry powder; mix well.
  6. Cook the rice separately according to package instructions.
  7. When the rice is ready, add the cooked carrot and onion mixture to the rice.
  8. Combine slowly and serve hot.
