Lime Chutney
A vibrant lime chutney bursting with citrus, ginger, and aromatic spices, perfect as a condiment or accompaniment for Indian-inspired dishes and grilled meats.
Ingredients
- 1 1/2 c. fresh lime juice ⓘ
- 1 1/2 c. minced lime peel
- 1 c. tarragon vinegar ⓘ
- 1 3/4 c. sugar ⓘ
- 1/4 c. minced, peeled fresh ginger root ⓘ
- 1 onion, finely chopped ⓘ
- 1 c. raisins ⓘ
- 1 tsp. coriander seed ⓘ
- 1 tsp. mustard seed ⓘ
- 1 tsp. white peppercorns ⓘ
- 3 whole cloves
- 1/2 tsp. cinnamon ⓘ
- 1/2 tsp. ground cardamom
- 1/8 tsp. cayenne ⓘ
Instructions
- In a stainless steel or enamel kettle, combine lime juice, lime peel, vinegar, sugar, ginger, onion, and raisins.
- Grind together the coriander seed, mustard seed, white peppercorns, and cloves.
- Add the ground spice mixture to the kettle with cinnamon, ground cardamom, cayenne, and salt.
- Bring to a boil over moderate heat.
- Simmer, stirring occasionally, for 40 to 50 minutes until the sauce thickens.
- Ladle the chutney into sterilized jars.
