Ingredients

  • 2 c. cooked carrots
  • 1 c. sugar
  • 1 c. milk
  • 1 stick butter or margarine
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt
  • 3 eggs
  • 2 heaping Tbsp. flour
  • 1 tsp. baking powder
  • 2-3 Tbsp. confectioner sugar

Instructions

  1. Put cooked carrots in a mixer, add sugar, milk, butter, vanilla extract, salt, eggs, flour, and baking powder, except for the confectioner sugar.
  2. Pour the mixture into a greased casserole dish.
  3. Bake at 350° for 40 to 45 minutes.
  4. Sprinkle the top with 2 to 3 tablespoons of confectioner sugar.
