- Mix sugar, salt, and margarine with the scalded milk and let cool to lukewarm.
- In a large bowl, dissolve yeast in warm water.
- Add the milk mixture to the yeast, then add the egg, whole-wheat flour, and 1 cup of white flour.
- Mix until smooth.
- Stir in grated carrots and chopped pecans.
- Knead the dough on a floured surface until elastic.
- Place the dough in a greased bowl, cover, and let rise until doubled in size.
- Punch down the dough and shape into loaves.
- Place in greased bread pans and let rise again until nearly doubled.
- Bake in a preheated oven at 375°F (190°C) for about 35-40 minutes or until golden brown.
