Ingredients

  • 2/3 cup scalded milk
  • 2 tablespoons sugar
  • 2 teaspoons salt
  • 3 tablespoons margarine
  • 2 packages yeast
  • 1 cup warm water
  • 1 large egg
  • 2 cups wheat flour
  • 4 cups white flour
  • 2 cups grated carrot
  • 3/4 cup chopped pecans

Instructions

  1. Mix sugar, salt, and margarine with the scalded milk and let cool to lukewarm.
  2. In a large bowl, dissolve yeast in warm water.
  3. Add the milk mixture to the yeast, then add the egg, whole-wheat flour, and 1 cup of white flour.
  4. Mix until smooth.
  5. Stir in grated carrots and chopped pecans.
  6. Knead the dough on a floured surface until elastic.
  7. Place the dough in a greased bowl, cover, and let rise until doubled in size.
  8. Punch down the dough and shape into loaves.
  9. Place in greased bread pans and let rise again until nearly doubled.
  10. Bake in a preheated oven at 375°F (190°C) for about 35-40 minutes or until golden brown.
