Ingredients

  • 1 lb boned skinned chicken breast
  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • vegetable or peanut oil
  • 2 cups hot cooked rice
  • Bouillon Sauce
  • slivered cashews
  • 2 chopped green onions
  • soy sauce (optional)

Instructions

  1. Cut chicken into 1 x 1 1/2-inch pieces.
  2. Dredge chicken in flour; let stand for 15 minutes.
  3. Combine eggs, milk, salt, and pepper in a bowl.
  4. Add chicken to the egg mixture and let stand for 10 minutes.
  5. Re-dredge chicken in flour and deep fry in oil at 375°F for 3 to 5 minutes until golden brown.
  6. Serve chicken over hot cooked rice.
  7. Spoon Bouillon Sauce over chicken and top with cashews and chopped green onions.
  8. Add soy sauce to taste, if desired.
