Cashew Chicken With Broccoli

Ingredients
- 1/2 cup raw cashews ⓘ
- 2 teaspoons vegetable oil ⓘ
- 1 small onion, chopped ⓘ
- 2 cloves garlic, finely chopped ⓘ
- 4 boneless, skinned chicken breast halves, cubed
- 1 cup broccoli flowerets ⓘ
- 1 cup reduced-sodium chicken broth ⓘ
- 2 tablespoons reduced-sodium soy sauce ⓘ
- 2 teaspoons cornstarch ⓘ
- 1/4 teaspoon salt ⓘ
- 1/4 teaspoon black pepper ⓘ
Instructions
- Lightly brown cashews in vegetable oil in a large nonstick skillet over medium heat, about 3 minutes.
- Remove the cashews with a slotted spoon and set aside.
- Saute chopped onion and garlic in the same skillet for 2 minutes.
- Add cubed chicken to the skillet and saute until golden brown, about 8 minutes.
- Add broccoli florets, 3/4 cup chicken broth, and soy sauce to the skillet.
- Simmer, covered, for 5 minutes.
- Dissolve cornstarch in the remaining 1/4 cup chicken broth.
- Stir the cornstarch mixture into the skillet.
- Simmer, stirring, over medium heat until the sauce thickens.
- Boil for 1 minute.
- Return the toasted cashews to the skillet and season with salt and black pepper.
