Ingredients

  • 1/2 cup raw cashews
  • 2 teaspoons vegetable oil
  • 1 small onion, chopped
  • 2 cloves garlic, finely chopped
  • 4 boneless, skinned chicken breast halves, cubed
  • 1 cup broccoli flowerets
  • 1 cup reduced-sodium chicken broth
  • 2 tablespoons reduced-sodium soy sauce
  • 2 teaspoons cornstarch
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Lightly brown cashews in vegetable oil in a large nonstick skillet over medium heat, about 3 minutes.
  2. Remove the cashews with a slotted spoon and set aside.
  3. Saute chopped onion and garlic in the same skillet for 2 minutes.
  4. Add cubed chicken to the skillet and saute until golden brown, about 8 minutes.
  5. Add broccoli florets, 3/4 cup chicken broth, and soy sauce to the skillet.
  6. Simmer, covered, for 5 minutes.
  7. Dissolve cornstarch in the remaining 1/4 cup chicken broth.
  8. Stir the cornstarch mixture into the skillet.
  9. Simmer, stirring, over medium heat until the sauce thickens.
  10. Boil for 1 minute.
  11. Return the toasted cashews to the skillet and season with salt and black pepper.
