Ingredients

  • 1 medium head cauliflower, separated into flowerets
  • 1 cup dill pickle liquid
  • 1 packet Equal
  • 1 small clove garlic, crushed
  • 1/4 cup chopped onion
  • 4 medium dill pickles, quartered
  • 1/4 cup sliced radishes

Instructions

  1. Cook cauliflower in salted water for 6 to 7 minutes or until tender-crisp.
  2. Drain the cauliflower.
  3. Mix pickle liquid, Equal, garlic, and onion in a small bowl.
  4. Pour the mixture over cauliflower, pickles, and radishes in a bowl.
  5. Toss to marinate.
  6. Cover and refrigerate for 12 hours, stirring occasionally.
  7. Drain before serving.
