Ingredients

  • 1 large head cauliflower, broken into florets
  • 2 cups white mushrooms, diced
  • 1 tablespoon olive oil, or more as needed
  • 2 tablespoons nutritional yeast
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried minced onion

Instructions

  1. Place cauliflower in a food processor and pulse until chopped into rice-shaped pieces.
  2. Combine cauliflower, mushrooms, and olive oil in a skillet over high heat; cook and stir until mushrooms are soft, 5 to 10 minutes. Mix nutritional yeast, black pepper, garlic powder, and minced onion into cauliflower mixture; cook and stir over low heat until heated through, 5 to 10 minutes.
