Ingredients

  • 2 c. sliced cauliflowerets
  • 1 (13 3/4 oz.) can chicken broth
  • 1 c. milk or light cream
  • 1 (10 3/4 oz.) can condensed cream of potato soup
  • 2 Tbsp. cornstarch
  • 1/8 tsp. white pepper

Instructions

  1. In a large covered saucepan, cook cauliflower in chicken broth until almost tender, about 10 minutes.
  2. Do not drain; set aside.
  3. In a separate bowl, combine milk or light cream with condensed cream of potato soup.
  4. Stir in cornstarch and white pepper until smooth.
  5. Add the mixture to the cooked cauliflower and broth in the saucepan.
  6. Cook over medium heat, stirring frequently, until the chowder thickens and is heated through.
