Ingredients

  • corn oil
  • cooking sherry
  • butter
  • salt

Instructions

  1. Cut chicken into bite-sized pieces and dip in flour.
  2. Brown the chicken in corn oil.
  3. Add salt and pepper after browning.
  4. Pour off the oil.
  5. Add mushrooms with their liquid and butter to the skillet.
  6. Allow the butter to melt.
  7. Add sherry and cook for 5 minutes.
  8. Transfer the mixture into a casserole dish.
  9. Bake for 15 to 20 minutes at 350°F.
  10. Serve over rice or pasta.
