Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons butter
  • 1 medium cauliflower
  • 2 to 3 medium cloves garlic
  • 1 bay leaf
  • 2 teaspoons basil
  • 29 ounces tomato puree
  • salt to taste
  • black pepper to taste
  • 2 cups mixed Parmesan cheese and Cheddar cheese
  • 1/2 pound uncooked thin spaghetti

Instructions

  1. Heat 2 tablespoons olive oil in a skillet.
  2. Add crushed garlic, bay leaf, and basil; sauté for one minute.
  3. Add cauliflower, sprinkle with salt, and sauté until tender.
  4. Optionally, add water and cover to steam the cauliflower until tender.
  5. Add tomato puree and lower heat to a simmer for 15 minutes.
  6. Cook spaghetti according to package instructions.
  7. Toss cooked spaghetti with butter, olive oil, and half of the cheese mixture.
  8. Place the spaghetti on a platter and pour cauliflower sauce over it.
  9. Top with the remaining cheese mixture and serve immediately.
