Ingredients

  • 1 cup diced celery
  • 3 tablespoons flour
  • 1 tablespoon minced onion
  • salt
  • pepper
  • 1 cup boiling water
  • 2.5 cups scalded milk
  • 3 tablespoons butter

Instructions

  1. Lightly brown the minced onion in butter over medium heat.
  2. In a separate pan, combine diced celery and boiling water and simmer until tender.
  3. When the onion is tender, add flour to the pan.
  4. Mix until the mixture is smooth and well combined.
  5. Gradually add scalded milk, stirring constantly to avoid lumps.
  6. Add the cooked celery and water to the mixture.
  7. Season with salt and pepper to taste, then heat thoroughly before serving.
