Chafing Dish Fruit

A delightful chilled fruit dish featuring a medley of canned fruits enhanced with citrus rinds and dates, perfect for gatherings or a refreshing dessert option.

Ingredients

  • 1 (1 lb.) can apricot halves
  • 1 (1 lb.) can cling peach halves
  • 1 (1 lb.) can pear halves
  • 1 (1 lb.) can pineapple slices or spears
  • juice of 2 oranges
  • grated rind of 1 orange
  • grated rind of 1 lemon
  • 8 oz. package pitted dates, chopped

Instructions

  1. Drain the canned apricot, peach, pear, and pineapple halves.
  2. Combine 2/3 cup of syrup from each fruit in a saucepan.
  3. Add orange juice and grated rinds of orange and lemon; simmer uncovered until reduced by half.
  4. If the mixture is too sweet, stir in the juice of 1 orange and 1/2 lemon.
  5. Transfer the mixture to the top of a double boiler.
  6. Add drained fruit and chopped dates; cook for about 15 minutes.
  7. Alternatively, an electric frying pan can be used for cooking.
  8. When ready to serve, transfer to a chafing dish and serve hot.
