Ingredients

  • 17 oz. can Del Monte whole kernel golden sweet corn
  • 1/4 cup butter or margarine, melted
  • 2 cups biscuit mix
  • 1/3 cup dry nonfat milk
  • 3 Tbsp. sugar
  • 1 cup shredded Cheddar cheese
  • 1 egg

Instructions

  1. Drain the corn, reserving the liquid.
  2. Add melted butter to the reserved liquid to measure 2/3 cup.
  3. Combine biscuit mix, dry milk, and sugar in a bowl.
  4. Stir in the drained corn and shredded Cheddar cheese.
  5. Add the liquid mixture and beaten egg to the dry ingredients.
  6. Mix lightly until just combined.
  7. Fill greased muffin pan 2/3 full with the batter.
  8. Bake at 400°F for 25 minutes.
  9. Remove from the pan immediately after baking.
