- Place butter in a 15x10-1/2x1-1/2-inch jelly-roll pan.
- Place the pan on the center rack of the oven for 3 to 4 minutes until the butter melts.

- Dip the sole fillets in beaten egg, then dredge in a mixture of grated Romano cheese and all-purpose flour.
- Place the coated fillets on a baking sheet.

- Drizzle vegetable oil over the fillets.
