Ingredients

  • 3 Tbsp. butter or margarine
  • 1 large egg
  • 3/4 grated Romano cheese
  • 2 Tbsp. all-purpose flour
  • 6 sole fillets (4oz. each)
  • 3 Tbsp. vegetable oil
  • 1/2 cup chopped unsalted dry-roasted cashew nuts

Instructions

  1. Preheat oven to 425°F.
  2. Place butter in a 15x10-1/2x1-1/2-inch jelly-roll pan.
  3. Place the pan on the center rack of the oven for 3 to 4 minutes until the butter melts.
  4. Prepare the fish fillets while the butter melts.
  5. Dip the sole fillets in beaten egg, then dredge in a mixture of grated Romano cheese and all-purpose flour.
  6. Place the coated fillets on a baking sheet.
  7. Sprinkle chopped unsalted dry-roasted cashew nuts over the fillets.
  8. Drizzle vegetable oil over the fillets.
  9. Bake in the preheated oven for about 8-10 minutes until the fillets are golden and cooked through.
