Cheddar Onion Bread

- Preheat oven to 375°F. Grease a 4 cup loaf pan and line with parchment paper. Grease.
- Heat the oil in a large frying pan and gently cook the onions for 10-15 minutes, until softened and beginning to turn golden. Drain on paper towels and set aside to cool.
- Meanwhile, sift the flour, salt and cayenne pepper into a large bowl. Stir in the chives and season to taste.
- In a separate bowl, combine the eggs and butter with 1 cup lukewarm water and stir to combine. Pour into the flour mixture, beating until smooth. Stir in the cheese and 3/4 of the onions.
- Spoon dough into the loaf pan and level the surface. Bake for 25 minutes. Sprinkle with the remaining onions and cook for another 25 minutes, until risen and golden brown; cover with parchment paper if the bread is browning too quickly.
- Allow to cool for 10 minutes, then remove from the pan. Serve warm or cold, cut into slices.
