Cheddar Onion Bread

Ingredients

  • 2 tbsp oil
  • 1 lb onions, peeled and sliced
  • 3 cup self-rising flour
  • 1 tsp salt
  • 1/2 tsp cayenne pepper
  • 2 tbsp chives, chopped
  • 2 None medium eggs
  • 3 tbsp butter, melted
  • 3.5 oz cheddar cheese, grated

Instructions

  1. Preheat oven to 375°F. Grease a 4 cup loaf pan and line with parchment paper. Grease.
  2. Heat the oil in a large frying pan and gently cook the onions for 10-15 minutes, until softened and beginning to turn golden. Drain on paper towels and set aside to cool.
  3. Meanwhile, sift the flour, salt and cayenne pepper into a large bowl. Stir in the chives and season to taste.
  4. In a separate bowl, combine the eggs and butter with 1 cup lukewarm water and stir to combine. Pour into the flour mixture, beating until smooth. Stir in the cheese and 3/4 of the onions.
  5. Spoon dough into the loaf pan and level the surface. Bake for 25 minutes. Sprinkle with the remaining onions and cook for another 25 minutes, until risen and golden brown; cover with parchment paper if the bread is browning too quickly.
  6. Allow to cool for 10 minutes, then remove from the pan. Serve warm or cold, cut into slices.
