Cheddar Whipped Potatoes

- In a large saucepan, bring potatoes and water to a boil. Continue cooking until the potatoes are very tender. Drain well.
- Return potatoes to the saucepan over low heat, stirring until they are dry. Transfer to a large bowl.
- In a small saucepan, over low heat, heat milk and margarine until steaming and margarine is melted.
- Add the heated milk and margarine to the potatoes in the bowl, along with the shredded Cheddar cheese, salt, and pepper.
- Using a mixer, beat the potatoes until they are blended and creamy smooth.
- Garnish with chopped chives before serving.
