Cheddar Whipped Potatoes

Creamy, cheesy whipped potatoes with sharp Cheddar flavor and a hint of chives, perfect as a comforting side dish for family dinners or holiday gatherings.

Ingredients

  • 3 lb. baking potatoes, peeled and cut into 1/2-inch chunks
  • 1/2 cup milk
  • 1/4 cup margarine
  • 1 1/2 cups shredded Cheddar cheese
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • chives

Instructions

  1. In a large saucepan, bring potatoes and water to a boil. Continue cooking until the potatoes are very tender. Drain well.
  2. Return potatoes to the saucepan over low heat, stirring until they are dry. Transfer to a large bowl.
  3. In a small saucepan, over low heat, heat milk and margarine until steaming and margarine is melted.
  4. Add the heated milk and margarine to the potatoes in the bowl, along with the shredded Cheddar cheese, salt, and pepper.
  5. Using a mixer, beat the potatoes until they are blended and creamy smooth.
  6. Garnish with chopped chives before serving.
