Cheery Cherry Loaf

Ingredients

  • 1 jar (6 oz.) red maraschino cherries
  • 2 1/2 c. all-purpose flour
  • 1 c. sugar
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs
  • 2/3 c. milk
  • 1/2 c. butter or margarine, melted
  • 1 jar (8 oz.) green maraschino cherries, drained and cut up

Instructions

  1. Drain red cherries, reserving liquid; add water, if needed, to liquid to equal 1/3 cup.
  2. Cut up cherries; set cherries and liquid aside.
  3. In a large bowl, combine flour, sugar, baking powder and salt.
  4. In a small bowl, lightly beat eggs.
  5. Add milk, butter and cherry liquid; stir into dry ingredients just until combined.
  6. Fold in red and green cherries, pecans and orange peel.
  7. Pour into a greased 9 x 5 x 3-inch loaf pan.
  8. Bake at 350° for 1 hour or until bread tests done.
  9. Yields 1 loaf.
