Ingredients

  • 2 (20 oz.) cans chunk pineapple
  • 1 cup sugar
  • 1 cup Ritz crackers
  • 6 tablespoons self-rising flour
  • 2 cups cheddar cheese, grated
  • 1/2 cup butter or margarine

Instructions

  1. Drain pineapple, keeping 6 tablespoons of juice.
  2. Mix sugar and self-rising flour slowly.
  3. Stir in the reserved pineapple juice.
  4. Add grated cheddar cheese and pineapple chunks, mixing well.
  5. Pour the mixture into a 2-quart dish.
  6. Combine butter and Ritz crackers until crumbly.
  7. Sprinkle the cracker mixture on top of the casserole.
  8. Bake at 350°F for 30 to 40 minutes until bubbly and golden.
