Cheese stuffed potatoes are creamy, cheesy, and comforting, perfect for a hearty side or main dish. They combine baked potatoes with melted cheese and savory flavors.

Ingredients

  • 4 medium baking potatoes
  • 1/4 cup butter or margarine
  • 1/2 cup milk
  • salt to taste
  • pepper to taste
  • 1 cup grated Cheddar cheese or diced American processed cheese

Instructions

  1. Bake the potatoes until tender, then let them stand for a few minutes.
  2. Halve the potatoes lengthwise and carefully scoop out the insides into a medium mixing bowl.
  3. Set the potato shells aside.
  4. Add butter, milk, salt, pepper, grated cheese, and chopped onion to the mashed potato insides.
  5. Mash until fluffy and well combined.
  6. Fill the potato shells with the cheesy mashed potatoes and serve.
