Ingredients

  • 8 to 10 lasagna noodles
  • 1 Tbsp. olive oil
  • 1 small onion
  • 4 garlic cloves
  • 2 - 10 oz. pkg. frozen spinach
  • 1 c. grated carrots
  • 2 c. cottage cheese
  • 1 c. Swiss cheese
  • 1/2 c. parmesan cheese
  • 1 c. mozzarella cheese
  • salt and pepper

Instructions

  1. Heat oil in a skillet and sauté onion and garlic until lightly brown and tender.
  2. Add spinach and carrots, season with salt and pepper, and cook for several minutes.
  3. Combine cottage cheese, mozzarella cheese, and Swiss cheese in a bowl and mix well.
  4. Add the spinach mixture to the cheese mixture and stir to combine.
  5. Place one-third of the spinach-cheese mixture at the bottom of a 13 x 9 inch sprayed baking dish.
  6. Layer 4 or 5 cooked lasagna noodles on top of the mixture.
  7. Repeat with another third of the mixture and another layer of noodles.
  8. Spread the remaining cheese mixture on top and sprinkle with grated parmesan cheese.
  9. Bake in a preheated oven at 350°F (175°C) for 35 to 45 minutes.
  10. Let stand for 15 to 20 minutes before cutting and serving.
  11. Optional: Layer cooked ground beef or sausage between the cheese mixture and noodles for meat lovers.
