Ingredients

  • 2 eggs
  • 1 cup milk
  • 3 tablespoons bacon or roast drippings
  • 1 cup flour
  • 1/2 teaspoon salt
  • 1 cup finely grated Gruyere cheese

Instructions

  1. Beat the eggs in a medium mixing bowl until very thick and lemon colored.
  2. Add the milk gradually, then add the bacon drippings and blend thoroughly.
  3. Add the flour and salt gradually and beat until smooth.
  4. Fold in half the cheese.
  5. Pour into a well-greased 1-quart baking dish.
  6. Sprinkle the remaining cheese over the top.
  7. Bake in a preheated 450° oven for 25 minutes or until golden brown.
  8. Serve immediately.
