Scots Eggs are savory, hearty bite-sized treats featuring hard-boiled eggs wrapped in seasoned sausage, coated in bread crumbs, and baked to crispy perfection—perfect for appetizers or hearty snacks.

Ingredients

  • 8 hard-boiled eggs
  • flour to dust eggs
  • 1/2 cup fine bread crumbs
  • 1 pound ground pork sausage
  • 1 egg, slightly beaten

Instructions

  1. Peel the hard-boiled eggs.
  2. Divide the ground pork sausage into 8 parts and flatten each into a round.
  3. Lightly coat each egg with flour.
  4. Shape a portion of sausage around each egg to completely enclose it.
  5. Roll each in beaten egg and then in bread crumbs, pressing the crumbs well into the sausage.
  6. Drop the coated eggs into a muffin tin.
  7. Bake at 375°F (190°C) for 25 to 30 minutes until golden and cooked through.
