- Peel the hard-boiled eggs.
- Divide the ground pork sausage into 8 parts and flatten each into a round.
- Lightly coat each egg with flour.
- Shape a portion of sausage around each egg to completely enclose it.
- Roll each in beaten egg and then in bread crumbs, pressing the crumbs well into the sausage.
- Drop the coated eggs into a muffin tin.
- Bake at 375°F (190°C) for 25 to 30 minutes until golden and cooked through.
