Ingredients

  • 12 to 15 vanilla wafers
  • 16 oz cream cheese
  • 1 Tbsp lemon juice
  • 2 eggs
  • 3/4 cup sugar
  • 1 tsp vanilla
  • 1 (16 oz) can cherry or blueberry pie filling

Instructions

  1. Line muffin tins with paper or foil liners.
  2. Place vanilla wafers in the bottom of each liner.
  3. In a mixing bowl, beat softened cream cheese until smooth.
  4. Add lemon juice, eggs, sugar, and vanilla; mix until well combined.
  5. Spoon the cream cheese mixture over the wafers in each liner.
  6. Bake at 350°F (175°C) for about 15-20 minutes until set.
  7. Let the cheesecakes cool completely.
  8. Top each mini cheesecake with a spoonful of cherry or blueberry pie filling before serving.
