Ingredients

  • 2 cups flour
  • 1/3 cup sugar
  • 1 cup butter
  • 4 eggs
  • 2 cups sugar
  • 1/4 cup flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine 2 cups of flour, 1/3 cup of sugar, and 1 cup of softened butter.
  3. Press this mixture into the bottom of a greased 9x13 inch baking dish to form the crust.
  4. Bake the crust for 15 minutes or until lightly golden.
  5. In a separate bowl, whisk together 4 eggs, 2 cups of sugar, 1/4 cup of flour, and lemon juice (add lemon extract if more lemon flavor is desired).
  6. Pour the lemon filling over the baked crust.
  7. Bake for an additional 20 minutes or until the filling is set.
  8. Let the lemon squares cool completely before cutting into squares and serving.
