Ingredients

  • 4 medium baking potatoes
  • 6 slices bacon, cooked and crumbled
  • 1/3 cup chopped onion
  • 1/3 cup shredded Cheddar cheese
  • 8 oz. carton sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon parsley flakes

Instructions

  1. Cook the potatoes in the microwave until done.
  2. Cut the potatoes lengthwise, remove the pulp, and save the shells.
  3. Combine the cooked potato pulp with the crumbled bacon, chopped onion, shredded Cheddar cheese, sour cream, salt, black pepper, and parsley flakes.
  4. Stuff the potato shells with the mixture.
  5. Microwave on High for 5 to 7 minutes until thoroughly heated.
