Ingredients

  • 1 graham cracker pie shell
  • 6 oz. semi-sweet chocolate bits
  • 3 oz. cream cheese
  • 3/4 c. sugar
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • 2 eggs
  • 1 c. heavy cream
  • 1 square semi-sweet chocolate

Instructions

  1. Melt the semi-sweet chocolate bits over hot, not boiling, water.
  2. Allow the melted chocolate to cool slightly.
  3. Stir the cream cheese until softened, then blend in 1/2 cup sugar, vanilla, and salt.
  4. Add the egg yolks one at a time, beating well after each addition.
  5. Stir in the melted chocolate mixture.
  6. Chill the mixture until it thickens, then beat until smooth.
  7. Pour into the graham cracker pie shell and chill before serving.
  8. Top with whipped heavy cream and garnish with a square of semi-sweet chocolate if desired.
