Cheesy Corn Squares
Ingredients
- 1 1/4 cups all-purpose flour ⓘ
- 2 tablespoons fresh parsley, minced ⓘ
- 1 teaspoon baking soda ⓘ
- 1 teaspoon seasoning salt ⓘ
- 1/2 teaspoon dried basil ⓘ
- 1/2 teaspoon dried oregano ⓘ
- 1/2 teaspoon black pepper ⓘ
- 4 eggs, beaten ⓘ
- 1 (15 1/4 ounce) can whole kernel corn, drained ⓘ
- 1 cup ricotta cheese ⓘ
- 1/3 cup onion, finely chopped ⓘ
- 1/4 cup parmigiano-reggiano cheese, grated ⓘ
- 1/4 cup vegetable oil ⓘ
- 8 ounces mozzarella cheese, shredded, divided ⓘ
- 1 teaspoon paprika ⓘ
Instructions
- In a large bowl, combine first 7 ingredients. Stir in eggs, corn, ricotta, onion, Parmesan. oil, and 4 oz. mozzarella; mix well.
- Pour into a greased 13x9 baking dish. Sprinkle with remaining mozzarella, and paprika.
- Bake, uncovered, at 350, for 30-35 minutes or until golden brown. Cut into squares.
