Cheesy Fried Egg

Ingredients

  • 2 tablespoons shredded white cheddar cheese
  • 2 tablespoons shredded red cheddar cheese
  • 1 teaspoon ground black pepper (or to taste)
  • 1/2 teaspoon salt (or to taste)
  • 2 eggs
  • 4 tablespoons milk
  • 1/8 teaspoon baking soda
  • 1/4 cup table butter

Instructions

  1. Place both cheeses in a mixing bowl, and add in the salt and pepper.
  2. Break the eggs into a separate dish, and add only the whites to the cheese.
  3. Add the milk to the mixing bowl, and beat until blended.
  4. Add the baking soda and beat again. Let it rest for 1-2 minutes.
  5. Place a pan over medium heat and melt the butter.
  6. When the butter has melted and starts to sizzle, add in the beaten egg whites with cheese and milk.
  7. Quickly make a little dent in the centre and add the egg yolks.
  8. Let it cool for a minute (or longer, if you prefer the yolks hard and not runny), adding butter to the edges if need be.
  9. Serve hot, with buttered toast.
