Ingredients

  • 1 1/4 cups orzo pasta
  • 1 onion, chopped
  • 1 1/2 tablespoons reduced-calorie margarine
  • 1 1/2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1 1/2 cups skim milk
  • 1 1/2 teaspoons fresh thyme or 1/2 teaspoon dried thyme
  • 1/3 cup grated Parmesan cheese
  • Parmesan cheese curls for garnish

Instructions

  1. Prepare orzo pasta according to package directions; drain.
  2. In a small saucepan, sauté chopped onion in reduced-calorie margarine for 5 minutes, until translucent.
  3. Stir in all-purpose flour and salt; cook for 1 minute.
  4. Gradually stir in skim milk and thyme.
  5. Cook, stirring constantly, until the mixture thickens.
  6. Reduce heat to low; stir in grated Parmesan cheese.
  7. Continue cooking for 3 to 4 minutes, until the cheese melts.
  8. Stir the cooked orzo into the cheese sauce.
  9. Garnish with Parmesan cheese curls and a sprig of thyme.
