Cheesy Spinach Balls

Ingredients

  • 20 ounces spinach, frozen 2 packages, frozen, thawed and chopped
  • 2 cups bread crumbs prefer whole wheat
  • 23 cup swiss cheese shredded, or more as needed
  • 4 tablespoons parmesan, parmigiano-reggiano cheese, grated
  • 1 medium onions finely chopped
  • 3 cloves garlic or to taste, minced, or pressed
  • 4 large eggs well beatened
  • 6 tablespoons butter, unsalted melted

Instructions

  1. Squeeze any excess water from thawed spinach and add spinach in large bowl.
  2. Add bread crumbs, Swiss cheese, Parmesan cheese, onion, garlic, eggs and butter, mix until evenly combined.
  3. Cover with plastic wrap and refrigerate it until firm enough to form into balls.
  4. Preheat oven to 350F (180C).
  5. Line 2 baking sheets with foil coated with cooking spray.
  6. Scoop enough of spinach mixture with spoon to form balls approximately 1-inch in diameter.
  7. Form mixture into balls and set on foil-lined baking sheet, arranging them about 1 1/2-inch apart.
  8. Repeat until all mixture is finished.
  9. Bake one sheet at a time, until lightly browned and firm, 16 to 22 minutes.
  10. Let cool for a few minutes.
  11. Serve warm.
  12. Makes about 4 dozens of balls.
