Cheesy Turkey Chowder

Ingredients

  • 2 frozen turkey wings or 1 turkey drumstick
  • 1 tsp. salt
  • 1 medium onion, chopped
  • 1 c. carrots, sliced
  • 1 c. celery, chopped
  • 1 c. potatoes, diced
  • 2 c. milk
  • 6 Tbsp. flour
  • 1/4 c. butter
  • 1 c. shredded cheese

Instructions

  1. Place turkey wing or drumstick in large saucepan.
  2. Add water until meat is just covered.
  3. Add salt and onion.
  4. Bring to boil, reduce heat and simmer until meat is tender.
  5. Remove meat from broth; debone and cut meat into small pieces.
  6. Set aside.
  7. To 4 cups broth (add water to make 4 cups, if necessary), add carrots, celery and potatoes.
  8. Simmer until tender.
  9. Gradually blend milk into flour until smooth.
  10. Stir into broth, along with butter and cheese.
  11. Cook over medium heat, stirring constantly, until thickened.
  12. Add turkey meat.
  13. This is very good with chicken meat, too.
