Ingredients

  • 1 lb dry bean soup mix
  • 2 qt water
  • ham hock or bone
  • 1 large onion
  • 16 oz tomato juice
  • 2 Tbsp lemon juice

  • 1 c chopped carrots
  • 3 chopped tomatoes
  • 2 c skim milk
  • 1/2 tsp pepper

Instructions

  2. Cover the beans with water and add 1 tablespoon of salt.
  3. Soak the beans overnight.
  4. Drain and rinse the beans.
  5. Add 2 quarts of water and the ham hock to a large pot.
  6. Bring to a boil, then simmer for 2 1/2 hours.
  7. Add the chopped onion, chopped celery, chopped carrots, tomato juice, lemon juice, and chopped tomatoes to the pot.
  8. Simmer the mixture for 30 minutes to 1 hour.
  9. Add the skim milk to the soup.
  10. Serve hot.
