Ingredients

  • 1 1/3 cups skim milk
  • 1/2 cup sugar
  • 1 egg
  • 3 egg whites
  • 2 teaspoons vanilla
  • 1/8 teaspoon salt
  • 3/4 cup plain flour
  • 1 pound frozen pitted cherries, thawed and drained
  • 1 pound frozen strawberries, thawed and drained
  • 2 tablespoons sugar for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Spray a baking pan with non-stick spray or lightly grease it.
  3. Combine all ingredients except strawberries, cherries, and garnishing sugar in a blender.
  4. Blend at high speed for 1 minute until smooth.
  5. Pour the batter into the prepared pan.
  6. Scatter the thawed, drained cherries and strawberries evenly over the batter.
  7. Bake in the preheated oven for about 40 minutes, or until the clafouti is puffed and golden around the edges.
  8. Optional: sprinkle with extra sugar for garnish before serving.
