Ingredients

  • 4 egg yolks
  • 1/2 cup sugar
  • 1/2 cup cherry juice
  • 1 cup cherries
  • 1 package gelatin
  • 1/4 cup cold water
  • 4 egg whites

Instructions

  1. Combine egg yolks, sugar, and cherry juice in a saucepan.
  2. Cook over medium heat until the mixture reaches custard consistency, stirring constantly.
  3. Remove from heat and add cherries.
  4. Dissolve gelatin in cold water, then add to the custard mixture.
  5. Let the mixture get very cold, stirring occasionally.
  6. Beat egg whites until stiff peaks form, then add sugar and beat for an additional 30 seconds.
  7. Fold the beaten egg whites into the chilled custard mixture.
  8. Pour into a cold crust and heaping high.
