Ingredients

  • 3 Anchovies
  • 1 tsp chopped garlic
  • 2 tsp red wine vinegar
  • 2 tsp Dijon mustard
  • 3 Tbsp olive oil
  • 1 coddled egg yolk
  • 5 dashes Worcestershire sauce
  • 1/2 squeezed lemon
  • 1/4 tsp fresh ground black pepper
  • 1/4 Cup Parmesan cheese

Instructions

  1. Using a medium-sized wooden salad bowl, mash and spread the anchovies and garlic with a fork and run the inside of the bowl with it.
  2. Add the vinegar and mustard, and blend thoroughly.
  3. Using the fork, add the olive oil and the coddled egg yolk.
  4. Mix together and add the Worcestershire sauce, lemon juice, black pepper, and Parmesan cheese.
  5. Add the croutons and lettuce to the dressing, then toss the salad until everything is coated with the dressing and serve in individual bowls.

Tips & Substitutions

For a creamier dressing, consider adding a tablespoon of mayonnaise or Greek yogurt. If you're short on anchovies, a teaspoon of capers can provide a similar umami flavor. Adjust the acidity by adding more lemon juice or vinegar based on your taste. Fresh garlic is recommended, but you can use garlic powder in a pinch. For a vegetarian version, simply omit the anchovies.

Serving Suggestions

Serve this Caesar salad dressing over crisp romaine lettuce, topped with homemade croutons for added texture. It pairs beautifully with grilled chicken or shrimp for a heartier meal. For an exciting twist, try it alongside a slice of Pumpkin-Ricotta Cheesecake for dessert, balancing the savory with a sweet finish.

Storage & Reheating

Store any leftover dressing in an airtight container in the refrigerator for up to 3 days. The flavors will meld, enhancing the taste. If the dressing thickens, whisk in a little water or olive oil before using. Ensure to keep the salad components separate from the dressing until you're ready to serve to prevent sogginess.

Frequently Asked Questions

Can I make this dressing ahead of time?

Yes, you can prepare the dressing a day in advance. Just store it in the refrigerator in an airtight container. The flavors will deepen overnight. Before serving, give it a good whisk to re-emulsify, as it may separate a bit while sitting.

Is it safe to use raw egg yolk in the dressing?

Using a coddled egg yolk is generally safe, as the gentle heating process reduces the risk of salmonella. However, if you're concerned about raw eggs, you can substitute with pasteurized egg yolks or use mayonnaise instead for creaminess.

What can I substitute for Parmesan cheese?

If you don't have Parmesan cheese on hand, Pecorino Romano is a great alternative, offering a similar flavor profile with a bit more saltiness. Nutritional yeast can also be used for a dairy-free option, giving a cheesy flavor without the dairy.
