Cherry Cream Cakes are delightful mini desserts featuring vanilla wafers, creamy filling, and sweet cherry topping, perfect for parties or special gatherings requiring a luscious, fruity treat.

Ingredients

  • 16 oz. cream cheese
  • 2 eggs
  • 1/2 cup sugar
  • 2 teaspoons vanilla
  • 1 box vanilla wafers
  • 1 can cherry pie filling

Instructions

  1. Line muffin tins with paper cups.
  2. Place a vanilla wafer in the bottom of each cup.
  3. Ensure cream cheese is at room temperature.
  4. Cream the cream cheese, eggs, sugar, and vanilla together until light and fluffy.
  5. Fill each cup two-thirds full with the cream mixture.
  6. Bake at 350°F (175°C) for 12 to 15 minutes.
  7. Allow to cool completely.
  8. Spoon two teaspoons of cherry pie filling on top of each cake.
