Ingredients

  • 1 (21 oz.) can cherry pie filling
  • 1 1/2 cups baking mix
  • 3 tablespoons granulated sugar
  • 2 teaspoons ground ginger
  • 1/2 cup margarine, melted and cooled
  • 1/2 cup milk
  • 1 large egg
  • 3 tablespoons finely chopped walnuts

Instructions

  1. Heat oven to 350°F.
  2. Generously grease an 8-inch cake pan. Pour in cherry pie filling and set aside.
  3. In a medium bowl, combine baking mix, sugar, and ground ginger.
  4. In a small bowl, mix melted margarine, milk, and egg.
  5. Blend well with a fork.
  6. Stir the egg mixture into the baking mix mixture until smooth.
  7. Spoon the dough evenly over the cherry filling in the cake pan.
  8. Bake for about 40 minutes until a toothpick inserted in the center comes out clean.
  9. Let cool for 20 minutes on a wire rack.
  10. Cut around the edge of the pan and turn out onto a serving plate with the cake on the bottom.
  11. Spread thickened juice around the sides of the cake.
  12. Press chopped walnuts around the side of the cake.
  13. Serve warm or at room temperature.
