Ingredients

  • 1 small bottle maraschino cherries
  • 1 cup softened butter
  • 1 cup sugar
  • 2 eggs
  • 1 cup sour cream
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup chopped nuts

Instructions

  1. Drain cherries, reserving the juice.
  2. Cream butter and sugar until light and fluffy.
  3. Add egg yolks, sour cream, and reserved cherry juice; mix well.
  4. Sift together flour, baking powder, and baking soda; gradually add to the creamed mixture and mix thoroughly.
  5. Beat egg whites until stiff peaks form.
  6. Fold the beaten egg whites into the batter gently.
  7. Add chopped cherries and nuts; fold to combine.
  8. Pour batter into a greased 9 x 5 x 3-inch loaf pan.
  9. Bake in a preheated 350°F (175°C) oven for 45 minutes or until a toothpick inserted into the center comes out clean.
