Ingredients

  • 16 oz. can red tart cherries (undrained)
  • 8 1/4 oz. can crushed pineapple (undrained)
  • 1 cup sugar
  • 1/2 cup instant nonfat dry milk powder
  • 1/2 cup water
  • 3 tablespoons lemon juice
  • 1/4 teaspoon salt
  • few drops red food color

Instructions

  1. In blender container, blend undrained cherries and undrained pineapple at medium speed until pureed.
  2. Add remaining ingredients and blend until well combined.
  3. Pour into a 13 x 9-inch baking pan. Cover with aluminum foil.
  4. Freeze until frozen about 3 inches from edge, approximately 4 to 5 hours.

Tips & Substitutions

For a smoother texture, ensure the cherries and pineapple are blended thoroughly. You can substitute fresh cherries for canned if they're in season, but you may need to adjust the sugar based on sweetness. Consider adding a splash of almond extract for extra depth. If you prefer a less sweet sherbet, reduce the sugar to 3/4 cup.

Serving Suggestions

Scoop the Cherry Sherbet into chilled bowls or glasses for an elegant presentation. It pairs beautifully with fresh mint leaves for garnish. Consider serving alongside light desserts like Berry Good Lemon Tarts for a delightful meal. This refreshing treat can also be served at brunch or summer gatherings.

Storage & Reheating

Store any leftover Cherry Sherbet in an airtight container in the freezer. To maintain texture, cover the surface with plastic wrap before sealing the container. For best results, enjoy within a week. To serve after freezing, let it sit at room temperature for a few minutes to soften slightly before scooping.
