Ingredients

  • 2/3 cup butter or margarine
  • 1 cup sugar
  • 2 eggs
  • 1 (8 oz.) container plain yogurt
  • 1 teaspoon grated lemon peel
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup coarsely chopped walnuts

Instructions

  1. Cream butter with 3/4 cup sugar until light and fluffy.
  2. Beat in eggs, one at a time, until blended.
  3. Stir in yogurt, lemon peel, and vanilla.
  4. Sift together flour, baking powder, baking soda, and salt.
  5. Add the dry ingredients to the creamed mixture, stirring until smooth.
  6. Add 3/4 cup chopped walnuts to the batter.
  7. Turn half of the batter into a greased, floured 9-inch tube pan.
  8. Repeat with the remaining batter if needed.
  9. Bake in a preheated oven at 350°F (175°C) for about 40 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow to cool slightly before removing from the pan.
