Ingredients

  • 1 box yellow cake mix
  • 2 Tbsp. vegetable oil
  • 2 (8 oz.) packages softened cream cheese
  • 1/2 cup sugar
  • 4 eggs
  • 1 1/2 cups milk
  • 3 Tbsp. lemon juice
  • 3 tsp. vanilla
  • 2 cans cherry pie filling

Instructions

  1. Preheat oven to 300°F.
  2. Reserve 1 cup of yellow cake mix.
  3. In a large bowl, combine remaining cake mix, 1 egg, and vegetable oil until mixture is crumbly.
  4. Press the mixture evenly into the bottom and halfway up the sides of a greased 13 x 9-inch pan.
  5. In a separate bowl, beat softened cream cheese until smooth.
  6. Add sugar and continue to beat until well combined.
  7. Add eggs one at a time, mixing well after each addition.
  8. Stir in milk, lemon juice, and vanilla until the mixture is smooth.
  9. Pour the cream cheese mixture over the crust in the pan.
  10. Bake in the preheated oven for approximately 60 minutes or until set.
  11. Allow to cool completely, then top with cherry pie filling before serving.
