Sweet and tangy cherry watermelon pickles combine refreshing watermelon rind with cherries and warm spices, creating a unique preserve perfect for snacking or garnishing dishes.

Ingredients

  • 1/2 large watermelon rind
  • 3 qt. cold water
  • 6 Tbsp. salt
  • 6 c. sugar
  • 2 c. vinegar
  • 2 Tbsp. whole spice
  • 1 Tbsp. whole cloves
  • 2 sticks cinnamon

Instructions

  1. Remove green skin and pink flesh from the watermelon rind.
  2. Cut the rind into 1-inch squares.
  3. Place the rind in a saucepan and cover with cold water; add salt.
  4. Set aside for 4 hours.
  5. Drain and rinse the rind with cold water and drain again.
  6. Add enough water to cover the rind; bring to a boil over medium heat.
  7. Boil the rind for 10 minutes, then remove from heat and drain thoroughly.
  8. Combine sugar and vinegar in a 5 to 6-quart pan.
  9. Tie the spices in a cheesecloth bag and add to the sugar-vinegar mixture.
  10. Bring the mixture to a boil and cook for 10 minutes.
  11. Remove from heat and add the prepared rind.
  12. Cool and refrigerate for at least 8 hours.
  13. Remove the rind from the refrigerator.
  14. Bring the syrup to a boil. Add the rind and cherries; let boil for 5 minutes.
  15. Remove the spice bag.
  16. Pack the rind and cherry mixture into sterilized jars, covering completely with hot syrup.
