Chewy Snickerdoodles

Ingredients

  • 1/2 c. margarine, softened
  • 1/4 c. applesauce
  • 1 1/2 c. granulated sugar
  • 2 eggs or egg substitute
  • 2 1/4 c. flour
  • 2 tsp. cream of tartar
  • 1 tsp. soda
  • 1/4 tsp. salt
  • 2 Tbsp. sugar

Instructions

  1. In a separate bowl combine 2 tablespoons of sugar and 2 teaspoons cinnamon.
  2. Heat oven to 400°.
  3. Mix the butter, applesauce, 1 1/2 cup sugar and the eggs in thoroughly.
  4. Blend in the flour, cream of tartar, soda and salt.
  5. Take about a heaping tablespoonful of dough and roll it in cinnamon and sugar in a separate bowl.
  6. Batter will be sticky.
  7. You may need more cinnamon and sugar.
  8. Place on a silver cookie sheet.
  9. Bake for 9 minutes. Cookies will spread big, thin and chewy.
