Chewy, sweet Chi-Chi Dango are delightful coconut-flavored Japanese rice flour treats, perfect for snacking or sharing at gatherings, with vibrant colors and a soft texture.

Ingredients

  • 1 lb. Mochiko
  • 2 1/2 cups sugar
  • 1 tsp. baking powder
  • 12 oz. can coconut milk
  • 1 tsp. vanilla
  • 2 cups water

Instructions

  1. Mix Mochiko, sugar, and baking powder in a bowl.
  2. Add coconut milk and water gradually, mixing well to avoid lumps.
  3. Add vanilla and food coloring as desired.
  4. Pour the mixture into a greased 9 x 13-inch aluminum pan.
  5. Cover the pan with foil.
  6. Bake at 350°F for 1 hour.
  7. Allow to cool completely.
  8. Cut into pieces and roll each in starch.
