Ingredients

  • 4 oz. semi-sweet chocolate
  • 8 Tbsp. butter
  • 2/3 cup sugar
  • 3 eggs
  • 1 2/3 cups ground almonds
  • 1 tsp. vanilla extract
  • 1/4 tsp. almond extract
  • confectioners sugar

Instructions

  1. In a large heavy saucepan, over medium heat, melt the semi-sweet chocolate with the butter.
  2. Mix in the sugar with a whisk, followed by the eggs, ground almonds, vanilla extract, and almond extract.
  3. Spray an 8-inch layer pan with spray shortening; line the bottom with parchment or wax paper.
  4. Spray with more shortening and dust with flour.
  5. Turn the batter into the prepared pan and bake in a preheated 375°F oven for 25 minutes.
  6. Cool in the pan on a rack for 20 minutes.
  7. Turn the cake out of the pan and peel off the paper. Finish cooling.
  8. Dust with confectioners sugar before serving.
