Ingredients

  • 4 to 6 boneless, skinless chicken breasts
  • vegetable oil
  • Italian bread crumbs
  • canned tomatoes
  • small onion
  • small green pepper

Instructions

  1. Brush chicken breasts lightly with vegetable oil.
  2. Dip chicken breasts in Italian bread crumbs to coat evenly.
  3. Place the coated chicken breasts in a baking dish.
  4. Top with thin slices of onion rings and pieces of green pepper in strips or chunks.
  5. Pour 1/2 to 3/4 cup canned tomatoes over the chicken and vegetables, avoiding much juice.
  6. Bake at 300° to 350°F for about 45 minutes or until the chicken is cooked through.
  7. Serve with rice or buttered noodles.
