  • 4 oz. Boursin garlic and herb cheese
  • 2 cups chopped cooked chicken
  • 1 Tbsp. chopped onion
  • 2 Tbsp. milk
  • salt and pepper to taste
  • 1 package frozen puff pastry, thawed
  • 1 egg
  • 1 tsp. water
  • 3 Tbsp. bread crumbs or grated Parmesan cheese

Instructions

  1. Combine Boursin cheese, chopped cooked chicken, chopped onion, milk, salt, and pepper in a bowl and mix well.
  2. Roll the puff pastry into one large square and cut into 4 equal squares.
  3. Spoon one-quarter of the chicken mixture into the center of each pastry square.
  4. Bring the four corners of each square together in the center, pinching seams to seal the bundle.
  5. Beat the egg with water in a small bowl to create an egg wash.
  6. Brush the top of each pastry bundle with the egg wash.
  7. Sprinkle bread crumbs or grated Parmesan cheese over the top of each bundle.
  8. Arrange the bundles on a baking sheet and bake at 350°F for 20 to 25 minutes or until golden brown.

Tips & Substitutions

For a creamier filling, consider adding a tablespoon of sour cream or cream cheese to the mixture. If you don't have Boursin cheese, a blend of cream cheese with garlic and herbs can serve as a substitute. For a twist, add some chopped spinach or sun-dried tomatoes to the chicken mixture. Remember to keep the puff pastry cold until ready to use for the best results.

Serving Suggestions

These bundles are delightful served with a light salad or steamed vegetables for a balanced meal. For a heartier option, pair them with mashed potatoes or rice. They also make a great appetizer for gatherings or a unique addition to a brunch spread. Consider serving them with a side of cranberry sauce for a festive touch.

Storage & Reheating

Leftover Chicken Boursin Bundles can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place them in a preheated oven at 350°F for about 10-15 minutes to restore their crispiness. Avoid microwaving, as it can make the pastry soggy.

Frequently Asked Questions

Can I make the filling ahead of time?

Yes, you can prepare the chicken filling a day in advance and store it in the refrigerator. Just be sure to assemble and bake the bundles right before serving to ensure the pastry is fresh and flaky.

Can I freeze these bundles?

Yes, you can freeze unbaked bundles. Arrange them on a baking sheet, freeze until solid, then transfer to a freezer bag. When ready to bake, simply add a few extra minutes to the baking time if baking from frozen.

What other cheeses can I use?

While Boursin adds a unique flavor, you can experiment with other soft cheeses like goat cheese or feta. You could also use a blend of mozzarella and cream cheese for a milder taste, but adjust the seasonings accordingly to maintain flavor.
