Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 shallot, minced
  • 1 medium onion, chopped
  • 1 green pepper, chopped 1/2 inch by 1 inch
  • 1/2 cup dry red wine
  • 1 teaspoon chile garlic paste
  • 1/4 cup peanuts or almonds
  • salt
  • pepper

Instructions

  1. Sprinkle chicken with pepper and salt to taste.
  2. Brown the chicken lightly in olive oil, then remove from pan.
  3. Add shallot, onion, and green pepper to the pan.
  4. Saute until vegetables are just clear to browned.
  5. Add dry red wine and stir in chili garlic paste.
  6. Return chicken to the pan, cover, and cook over low heat for 10 minutes.
  7. Add peanuts or almonds and cook for an additional 5 to 10 minutes.
  8. Serve with rice or pasta.
