Ingredients

  • 1 cup cubed cooked chicken
  • 2 1/2 cups cooked broccoli
  • 1 cup shredded Cheddar cheese
  • 1 can French fried onions
  • 6 flour tortillas (7-inch size)
  • 1 can mushroom soup
  • 1 can milk
  • 1 tomato, chopped

Instructions

  1. Make mushroom sauce with the mushroom soup and milk; set aside.
  2. Combine cooked cubed chicken, cooked broccoli, 1/2 cup shredded Cheddar cheese, 3/4 cup mushroom sauce, and 1/2 can French fried onions.
  3. Roll up the mixture in the flour tortillas.
  4. Place seam side down in a lightly greased 9 x 13-inch baking dish.
  5. Stir chopped tomato into the remaining mushroom sauce.
  6. Pour the tomato-infused sauce over the rolled-up casseroles.
  7. Bake, covered, at 350°F (175°C) for 35 minutes.
  8. Remove cover, top with remaining cheese and French fried onions.
  9. Bake uncovered for an additional 5 minutes until cheese is melted and bubbly.
